I build an ambilight using the APA102.
Can I just turn the LED lights off (brightness 0) or should I remove it completely from the electricity (smart plug)
How should you turn of the LED?

Either works, but it'll still keep using power if not turned off fully.
I use a master-slave plug that turns off the power to my whole AV system, TV, media player and ambilight when the receiver is turned off. -

Okay, Thanks -
if you do it this way, make sure your sd-card is read-only...otherwise you could damage your system

How can I tell If my sd card is read only? -
Most likely it's not. It's something you have to do.

I use this method:

Their "You can never ever undo this" is a bit misleading, though. If you need to make any changes, it's as simple as SSHing into the Pi and running
mount -o remount,rw /This gets you write access until the next reboot, to make any changes and calibrations as needed.

I'm putting together a system and have a similar question. My RPI will be running a security camera so it will remain on all the time. If I get a master/slave plug and plug my LED's as a slave to turn them off with the tv while keeping my RPI in a constant plug, will there be any kind of issue with the data/spi/ground being connected to the RPI? I don't think there will be, but it is a possibility I want to cross off my list. I think this might be a better solution than using a remote to trigger a script turning the LED's down to 0.
